I created this recipe to mimic my favorite breakfast meal, Jimmy Dean’s Delights Turkey Breakfast Scramble Bowl, which I love! Even though I’m an early morning riser, up usually around 5:30 a.m., I still don’t seem to find time to make a hot, fresh breakfast so the frozen meals were/are a perfect solution.
It hit me one morning when I went to the freezer, rushing my way out the door to get to work, I realized I hadn’t been to the grocery store and was completely out of stock. UGH. At that moment the lightbulb went off in my head. I can make a big pan of this breakfast scramble myself – and – have enough servings to last the entire week. BRILLIANT! This will save me money and I can mix-up the recipe each week with different ingredients. So, that’s what I’ve been doing for months now.
Here is the recipe I made this week:
4 – slices Turkey Bacon
7 – whole eggs
8 oz egg whites (I use 1/2 carton of egg whites)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup fat-free half & half, or milk
20 Ritz crackers (I like whole wheat flavor or reduced fat variety)
4 oz. reduced fat Mozzarella or Italian blend cheese (really – you can use any cheese you like)
1 can white hominy (found in the canned corn section)
1 medium size potato (pre-cooked)
red pepper flakes (to your taste satisfaction)
1/2 teaspoon salt (This recipe can over-salt easily so be stingy with the salt.)
OPTIONAL Adds: Kale, Spinach, Black Olives, Tomatoes, Black beans
Grease or use Pam Cooking Spray: 13 x 9 pan
Preheat Oven: 370 degrees
Potatoes: Dice and boil until medium-soft. Don’t overcook because they will continue to cook in the oven.
Sausage & Bacon: Cook in a skillet ahead of time, make sure bacon is fully cooked.
Hominy and/or Black beans: Rinse and drain. Never put into casserole directly from the can. Always rinse first.
Line the bottom of the pre-greased baking pan with the Ritz crackers. They don’t need to completely cover the bottom.
Mix together with a beater in a deep bowl: Eggs, egg whites, half & half, salt, baking powder and baking soda
Start building the casserole: (in this order)
- Ritz Crackers on the bottom
- Sausage & bacon
- Red pepper flakes
- Hominy or beans
- (add optional ingredients next)
- Pour egg mixture over entire pan
- Option to sprinkle a little more cheese on top.
Bake for 30 minutes at 370-degrees.
Let sit for 15 minutes before serving.
A 13 x 9 pan makes about 7 – 8 servings.
