I’m love cooking short-cuts especially for dinner after a long day at the office. I’ve learned from my mother, my grandmother and my own experience over the years to keep a stocked pantry and frozen foods for those very nights when I need something easy to whip up for dinner.
This recipe I just “invented” a few weeks ago. Hungry, tired and no fresh food in the house I had to find something to fix for myself.
I remembered I had some frozen Turkey Meatballs in the freezer, thanks to the on-going BOGOs at Publix. Another BOGO I usually keep stocked is either marinara sauce or low-fat Alfredo sauce. And lastly, you’ll always find quinoa or brown rice in my pantry. These three items, with some excellent seasoning would be my quick-and-easy dinner.
- Cook the quinoa per instructions, which usually takes about 25-30 minutes.
- Heat the meatballs in the microwave per instructions on the bag.
- In a saucepan, heat the Alfredo sauce, adding in curry seasoning.
Place 1/2 cup of cooked quinoa in a bowl. Add 5 – 7 meatballs. Pour curried Alfredo sauce on top.
As an option, I also added a little hominy, to give it some more substance. Not everyone likes hominy so totally optional.
